Ingredients

  • 1 Piece Lemon Grass Bwfo
  • 50G Black Garlic Cloves, 50G
  • 1 L Olive Oil – Organic
  • 1 Pack Planet Organic G's Baby Leaf Spinach
  • - Black Kale Pesto
  • 120 G Blue Dragon Panko Breadcrumbs 120g
  • - Maldon Flakes Sea Salt

Instructions

  1. 1. Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.
  2. 2. Finely chop the parsley and dill, then mix them with panko breadcrumbs, a pinch of salt, and pepper in a bowl.
  3. 3. Pat the salmon fillets dry, brush them lightly with olive oil, and press the herb mixture onto the top of each fillet.
  4. 4. Place the crusted salmon on the prepared tray and bake for 12-15 minutes until the fish is cooked through and the crust is golden.
  5. 5. While the salmon is baking, heat 1 tablespoon of olive oil in a large skillet over medium heat.
  6. 6. Mince the garlic cloves and sauté them in the skillet until fragrant, about 1 minute.
  7. 7. Add the baby spinach and kale to the skillet, tossing well to coat with the garlic oil.
  8. 8. Squeeze the juice of half a lemon over the greens and season with a pinch of salt and pepper.
