- 1 Piece Lemon Grass Bwfo
- 50G Black Garlic Cloves, 50G
- 1 L Olive Oil – Organic
- 1 Pack Planet Organic G's Baby Leaf Spinach
- - Black Kale Pesto
- 120 G Blue Dragon Panko Breadcrumbs 120g
- - Maldon Flakes Sea Salt
Instructions
- 1. Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.
- 2. Finely chop the parsley and dill, then mix them with panko breadcrumbs, a pinch of salt, and pepper in a bowl.
- 3. Pat the salmon fillets dry, brush them lightly with olive oil, and press the herb mixture onto the top of each fillet.
- 4. Place the crusted salmon on the prepared tray and bake for 12-15 minutes until the fish is cooked through and the crust is golden.
- 5. While the salmon is baking, heat 1 tablespoon of olive oil in a large skillet over medium heat.
- 6. Mince the garlic cloves and sauté them in the skillet until fragrant, about 1 minute.
- 7. Add the baby spinach and kale to the skillet, tossing well to coat with the garlic oil.
- 8. Squeeze the juice of half a lemon over the greens and season with a pinch of salt and pepper.
- 9. Cook the greens for 4-5 minutes, stirring occasionally, until wilted and tender.
- 10. Remove the salmon from the oven and let it rest for 2 minutes before serving.
- 11. Plate the herb-crusted salmon alongside the lemon garlic greens, garnishing with extra dill or lemon wedges if desired.
