- 50G Black Garlic Cloves, 50G
- - PLJ Lemon Juice Original Sharp 500ml
- - Edmal Red Cabbage
- - Oxo Chicken Stock Cubes
- - Greenfields Caraway Seeds
- 1 L Olive Oil – Organic
- - Apple Cider Vinegar
- - Greenfields Black Peppercorns
Instructions
- 1. Preheat your oven to 180°C and line a baking tray with parchment paper.
- 2. Finely chop parsley and dill, then mix them together in a small bowl.
- 3. Rub olive oil onto the salmon fillets and season with salt, pepper, and chopped herbs.
- 4. Place the salmon on the prepared tray and bake for 15-18 minutes until cooked through.
- 5. While salmon bakes, shred the red cabbage into thin strips and set aside.
- 6. Heat olive oil in a large pan over medium heat, then sauté minced garlic until fragrant.
- 7. Add shredded cabbage, caraway seeds, salt, and pepper to the pan, stirring well.
- 8. Pour in the apple cider vinegar and chicken stock, then cover the pan with a lid.
- 9. Let the cabbage simmer on low heat for 15 minutes, stirring occasionally.
- 10. Remove the salmon from the oven and drizzle with fresh lemon juice before serving.
- 11. Plate the salmon alongside the braised red cabbage and garnish with extra herbs if desired.
