Instructions

  1. 1. Scrub the outside of the clam shells thoroughly, discarding any broken or open clams.
  2. 2. Soak the clams in salted water for at least 3 hours to clean them thoroughly. Rinse and drain the clams afterward.
  3. 3. Place 1/2 cup of water in a 2-quart casserole dish. Microwave on High for 2 to 3 1/2 minutes or until the water boils. Add the clams to the dish.
  4. 4. Cover the casserole dish and microwave on High for 3 to 5 1/2 minutes, stirring once, until the clams open. Remove clams from the dish as they begin to open.
  5. 5. Remove each clam from its shell and reserve half of each shell. Mince the clam meat and set it aside.
  6. 6. In a small bowl, mix 1/4 cup bread crumbs, 3 tablespoons melted butter, 1 tablespoon chopped parsley, 1/8 teaspoon thyme, 1/4 teaspoon paprika, 1/8 teaspoon pepper, and 2 teaspoons lemon juice until well combined.
  7. 7. Spoon the minced clam meat back into the reserved shells. Top each with the breadcrumb mixture, pressing gently to adhere.
  8. 8. Arrange the filled shells on a baking sheet and broil on high for 2-3 minutes, or until the topping is golden and crisp.
  9. 9. Serve the herb-crusted clams warm as a delightful dinner centerpiece.
