- 1 Kg Red Onion 1kg
- 250G Garlic 250g
- 100G Ginger 100G
- - Tata Salt
- 400 g Trs Turmeric Powder 400G
Instructions
- 1. Rinse the masoor dal thoroughly under cold water until the water runs clear, then set it aside.
- 2. Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add cumin seeds and asafoetida, stirring for 30 seconds until aromatic.
- 3. Add the chopped tomatoes, bell peppers, shredded cabbage, and green beans to the pot. Stir well and cook for 4-5 minutes until the vegetables begin to soften.
- 4. Add the rinsed masoor dal, turmeric powder, coriander powder, and salt to the pot. Stir to combine and let the spices coat the ingredients evenly.
- 5. Pour enough water into the pot to cover the ingredients by about two inches. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 25-30 minutes, stirring occasionally, until the lentils are tender and the soup reaches the desired consistency.
- 6. Once cooked, remove the pot from heat and stir in the lemon juice for a touch of brightness.
- 7. Garnish with freshly chopped coriander and serve the soup hot in bowls. Enjoy with a side of warm flatbread or on its own.
