Instructions
- 1. Cut and remove seeds from 4 sweet peppers, then chop them along with 2 onions and 2 cups of zucchini.
- 2. Heat 2 tablespoons of olive oil in a large kettle over medium to low heat. Add the chopped onions, sweet peppers, and zucchini, and sauté until tender-crisp, about 5-7 minutes.
- 3. In a separate frying pan, heat 2 tablespoons of garlic-flavoured olive oil over medium heat. Add the chopped sweet peppers and zucchini, and cook until tender, about 8-10 minutes.
- 4. Add the cooked vegetable mixture to the sautéed vegetables in the kettle.
- 5. Peel and coarsely chop 6 tomatoes, then add them to the kettle along with 2 cans of rinsed dark red kidney beans.
- 6. Stir in 3 cups of tomato sauce and 5 tablespoons of chili powder. Mix well to combine all ingredients.
- 7. Bring the mixture to a boil while stirring, then reduce the heat to low and let it simmer uncovered for 45 minutes to 1 hour, stirring occasionally to prevent sticking.
- 8. Taste and adjust seasoning if needed before serving. Serve hot and enjoy your hearty kosher chili!
