Ingredients
- 2.5 Kg Casa Marrazzo Organic Chopped Tomatoes, 2.5Kg
- 500G Aunt Bessie'S Maple & Thyme Glazed Carrots
- 450G Pack'D Organic Super Sweet Sweetcorn
- Black Beans 1 Kg Feijao Preto, Black Beans 1Kg
- - Knorr Stock Cubes Vegetable
- - Mccormick Cumin Powder
- 100 G East End Ground Coriander
- - Ds Cjo Soy Sauce For Soup 840ml
- 250 ml Critida Lemon Infused Olive Oil 250Ml
- 1 Kg Kosher Sea Salt Bwfo
Instructions
- 1. Heat a medium-sized pot over medium heat and add 1 tablespoon of olive oil.
- 2. Add 2 diced carrots and sauté for 5 minutes until slightly softened.
- 3. Stir in 1 teaspoon of cumin and 1 teaspoon of coriander, cooking for 1 minute to release their aroma.
- 4. Add 1 cup of black beans, 1 cup of diced tomatoes, 1/2 cup of corn, and 1 crumbled vegetable bouillon cube to the pot.
- 5. Pour in 2 cups of water and bring the mixture to a boil. Reduce the heat to low and let it simmer for 20-25 minutes, stirring occasionally, until the carrots are tender.
- 6. Season with 1 teaspoon of soy sauce and adjust salt to taste. Stir well and cook for another 2 minutes.
- 7. Serve the stew hot as a hearty and satisfying meal.
