Instructions
- 1. Soak 2 cups of beans overnight in water, then drain them before use.
- 2. In a heavy saucepan or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add 3 diced onions and sauté until golden brown.
- 3. Add 1/4 teaspoon ginger, 1/4 teaspoon pepper, and 2 teaspoons salt to the onions, stirring well to combine.
- 4. Stir in the soaked beans, 1 cup of barley, and 8 small potatoes (peeled). Sprinkle 2 tablespoons of flour and 2 teaspoons of paprika evenly over the mixture.
- 5. Sprinkle 1/2 cup of chia seeds evenly over the mixture.
- 6. Pour enough boiling water into the pot to cover the mixture by one inch. Cover the pot tightly with a lid.
- 7. Bake the dish in a preheated oven at 250°F (125°C) for 24 hours, or for quicker cooking, bake at 350°F (180°C) for 4 to 5 hours.
- 8. Once cooked, carefully remove the chia seeds, and serve alongside the barley and bean mixture. Serve hot and enjoy!
