- 1. Combine 1 cup frozen mixed vegetables, 1 packet low-sodium onion soup mix, 1 cup whole-grain macaroni, 3 cups water, and 2 cups low-sodium vegetable juice in a large heavy pan. Bring to a boil over medium-high heat.
- 2. While the soup base is heating, cook 250 g lean ground turkey in a nonstick skillet over medium heat, stirring to crumble, until fully cooked and no pink remains. Drain any excess fat.
