  • 454 g Southcliffe Turkey Mince 454G
  • 60G Terre Exotique Cheeselovers Pepper, 60G
  • - Forest Whole Foods Organic White Quinoa

  • 280G Caprichos Del Paladar Roasted Chopped Tomatoes, 280G
  • - Mill & Mortar Finishing Salt Flakes Gift Set
  • - Tropical Sun Onion Powder

Instructions

  1. 1. Combine 1 cup frozen mixed vegetables, 1 packet low-sodium onion soup mix, 1 cup whole-grain macaroni, 3 cups water, and 2 cups low-sodium vegetable juice in a large heavy pan. Bring to a boil over medium-high heat.
  2. 2. While the soup base is heating, cook 250 g lean ground turkey in a nonstick skillet over medium heat, stirring to crumble, until fully cooked and no pink remains. Drain any excess fat.
  3. 3. Stir the cooked ground turkey into the boiling vegetable mixture. Reduce the heat to low and let it simmer for 20 minutes, stirring occasionally to prevent the macaroni from sticking.
  4. 4. Taste the soup and adjust seasoning with salt and pepper if needed, keeping dietary restrictions in mind.
  5. 5. Serve the soup hot, garnished with freshly chopped parsley if desired. This recipe yields about 2 quarts, or 8 servings of 1 cup each.
