Instructions
- 1. In a large bowl, combine 700 g potato starch, 1 1/2 cups brown sugar with ginger, 2 tbsp onion, 1/4 tsp dry mustard, 1 1/2 tsp salt, 1/8 tsp black pepper, 1 egg, and 1/3 cup milk. Mix until well blended.
- 2. Shape the mixture into small balls, about 1 inch in diameter.
- 3. Heat 2 tbsp oil in a large skillet over medium heat. Add the balls and cook until browned on all sides, about 6-8 minutes. Remove the balls and set aside. Drain any excess fat from the skillet.
- 4. In a small bowl, mix 1/4 cup brown sugar, 1/2 tsp ground ginger, and a pinch of salt. Gradually stir in 1/2 cup reserved pineapple juice, 1/4 cup vinegar, and 1 tbsp soy sauce until smooth.
- 5. Pour the sauce mixture into the skillet and cook over medium heat, stirring constantly, until thickened, about 3-4 minutes.
- 6. Return the balls to the skillet and stir to coat them in the sauce. Cook for 5 minutes, allowing the flavors to meld.
- 7. Add 1 cup pineapple chunks, 1 green pepper cut into strips, and 1 tomato cut into wedges to the skillet. Cook for an additional 3-4 minutes, until the vegetables are tender and heated through.
- 8. Serve the balls and sauce over steamed rice for a complete meal.
