Instructions
- 1. Rinse 2 lb of pinto beans thoroughly and soak them in water for at least 6 hours or overnight.
- 2. Drain the soaked beans and cook them in a large pot with fresh water over medium heat until they are almost tender, about 45 minutes.
- 3. While the beans are cooking, peel and cut 5 medium potatoes into chunks.
- 4. In a separate pan, heat 2 tbsp olive oil and sauté 2 diced onions until soft and translucent, about 5 minutes.
- 5. Add the sautéed onions, potato chunks, 2 cups of tomato sauce, 1 tsp cumin, 1 tsp smoked paprika, 1 tsp salt, and 1/2 tsp black pepper to the pot with the beans.
- 6. Stir well, cover, and simmer the stew over low heat until the potatoes are tender and the flavors are well combined, about 25-30 minutes.
- 7. Taste and adjust seasoning if needed. Serve hot with crusty bread or rice for a complete meal.
