- 3 X 400G Garofalo Chopped Italian Tomatoes
- 60G Terre Exotique Cheeselovers Pepper, 60G
- 3 Pcs Green Lime 3 Pcs
- 25G Fillippone Italian Organic Bay Leaves, 25G
- 70G Mill & Mortar Citrus Salt Flakes, 70G
- - Silver Spoon Granulated Sugar
Instructions
- 1. In a 3-quart pan, heat 1/4 cup butter over medium heat until melted.
- 2. Add 1/2 cup finely chopped onion and cook until tender, about 5 minutes.
- 3. Stir in 1/4 cup flour and cook for 1-2 minutes, stirring constantly, to form a roux.
- 4. Gradually add 1 cup water, stirring continuously to avoid lumps.
- 5. Add 6 chopped tomatoes, 1 bay leaf, 1 tablespoon chopped parsley, 1 1/4 teaspoons salt, 1 teaspoon sugar, 1/2 teaspoon thyme, and 1/4 teaspoon pepper to the pan.
- 6. Bring the mixture to a boil over medium-high heat.
- 7. Reduce the heat to low, cover the pan, and let the soup simmer for 20 minutes, stirring occasionally.
- 8. Remove the bay leaf and use an immersion blender to puree the soup until smooth, or leave it slightly chunky if preferred.
- 9. Taste and adjust seasoning if needed. Add more water to adjust the consistency, if desired.
- 10. Serve hot, garnished with a lime slice and additional parsley if desired.
