Instructions

  1. 1. In a 3-quart pan, heat 1/4 cup butter over medium heat until melted.
  2. 2. Add 1/2 cup finely chopped onion and cook until tender, about 5 minutes.
  3. 3. Stir in 1/4 cup flour and cook for 1-2 minutes, stirring constantly, to form a roux.
  4. 4. Gradually add 1 cup water, stirring continuously to avoid lumps.
  5. 5. Add 6 chopped tomatoes, 1 bay leaf, 1 tablespoon chopped parsley, 1 1/4 teaspoons salt, 1 teaspoon sugar, 1/2 teaspoon thyme, and 1/4 teaspoon pepper to the pan.
  6. 6. Bring the mixture to a boil over medium-high heat.
  7. 7. Reduce the heat to low, cover the pan, and let the soup simmer for 20 minutes, stirring occasionally.
  8. 8. Remove the bay leaf and use an immersion blender to puree the soup until smooth, or leave it slightly chunky if preferred.
  9. 9. Taste and adjust seasoning if needed. Add more water to adjust the consistency, if desired.
  10. 10. Serve hot, garnished with a lime slice and additional parsley if desired.
