Instructions

  1. 1. Season 500 g halal chicken pieces with 1 tbsp sweet basil, 1 tsp salt, 1/2 tsp black pepper, and 1 tbsp curry powder.
  2. 2. Heat 2 tbsp olive oil in a large skillet over medium heat. Add the seasoned chicken, 1 diced onion, and 1 diced green pepper. Stir-fry until the chicken starts to brown, about 5-7 minutes.
  3. 3. Add 1/2 cup water to the skillet, cover, and reduce the heat to low. Let the mixture simmer for 20 minutes, stirring occasionally.
  4. 4. Rinse 3 cups of rice thoroughly and stir it into the skillet. Add enough water to just level with the mixture.
  5. 5. Cover the skillet tightly and cook on low heat until the rice is tender and the water is absorbed, about 15-20 minutes.
  6. 6. Fluff the rice with a fork and garnish with 2 tbsp chopped parsley before serving.
