- 500G Aunt Bessie'S Maple & Thyme Glazed Carrots
- - Forest Whole Foods Organic White Quinoa
- 600G Picard-Organic Courgette Slices
- 200 Ml Isigny Sainte Mere Aop Creme Fraiche
- 500 Ml Daylesford Organic Hot & Sour Vegetable Broth
Instructions
- 1. Preheat your oven to 350°F (175°C).
- 2. In a 13 x 9-inch baking dish, combine 2 sliced carrots and 3/4 cup of uncooked quinoa, spreading them evenly across the bottom.
- 3. In a medium bowl, mix 1/2 cup of creme fraiche and 1 1/4 cups of hot & sour vegetable broth until smooth.
- 4. Pour half of the creme fraiche mixture over the carrots and quinoa, stirring gently to combine.
- 5. Add 1 package (about 200 g) of sliced courgettes on top of the quinoa mixture, ensuring they are evenly spaced.
- 6. Add 1 package (about 200 g) of sliced mushrooms on top of the courgettes.
- 7. Pour the remaining creme fraiche mixture over the courgettes and mushrooms, ensuring everything is well-coated.
- 8. Cover the baking dish tightly with aluminum foil to seal in moisture.
- 9. Bake in the preheated oven for 1 hour and 15 minutes, or until the quinoa is tender.
- 10. Remove from the oven, let it rest for 5 minutes, and serve warm.
