Ingredients
- 200G All Things Butter Unsalted Butter
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 1 stick Organic Celery Stick
- 1 Kg Carrots - 1kg
- - Oxo Chicken Stock Cubes
- 60G Terre Exotique Cheeselovers Pepper, 60G
- 500 G Jack'S Cauliflower Florets
- 50 g Dry Ginger | Sukku | Sonth | Chukku | Sonti | Onashunti Powder 50G
Instructions
- 1. Melt 1/4 cup butter in a large saucepan over medium heat.
- 2. Add 2 cups diced onion, 2 cups diced celery, and 1 diced carrot to the saucepan. Sauté for 5-7 minutes until the vegetables are tender and fragrant.
- 3. Stir in 6 cups chicken stock, 2 teaspoons powdered ginger, 1/4 teaspoon pepper, and 1 medium cauliflower cut into florets.
- 4. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the cauliflower is tender.
- 5. Remove the saucepan from heat and allow the soup to cool slightly. Use a blender to puree the soup until smooth, working in batches if necessary.
- 6. Return the pureed soup to the saucepan and reheat gently over low heat. Adjust seasoning with additional pepper if needed.
- 7. Serve the soup hot, garnished with your choice of fresh herbs or a drizzle of cream, if desired.
