- 1 Kg Carrots - 1kg
- 100 G Jumbo Garlic 100g
- 500 Ml Daylesford Organic Hot & Sour Vegetable Broth
- - Potts Vegetable Stock Can
- 400G Dunns River Red Kidney Beans
- - Ktc Vegetable Oil
- - Mill & Mortar Finishing Salt Flakes Gift Set
Instructions
- 1. Heat 2 tablespoons of cooking oil in a pan over medium heat.
- 2. Add 1 diced onion and sauté until tender and beginning to brown, about 5 minutes.
- 3. Stir in 1 cup of white rice and cook, stirring frequently, until the rice begins to change color, about 3-4 minutes.
- 4. Add 2 cups of vegetable broth, 1 vegetable stock, 1 shredded carrot, and salt to taste. Stir well and bring to a boil.
- 5. Reduce the heat to low, cover the pan, and let the rice cook until the broth is absorbed, approximately 20 minutes.
- 6. In a separate pan, heat 1 tablespoon of cooking oil over medium heat. Add 2 minced garlic cloves and sauté until fragrant, about 1 minute.
- 7. Add 1 cup of cooked red kidney beans to the pan with the garlic. Stir and cook until heated through, about 5 minutes. Season with salt to taste.
