Instructions
- 1. Rinse the quinoa thoroughly under cold water to remove any bitterness and set it aside.
- 2. Heat 1 tablespoon of olive oil in a saucepan, add the quinoa, and toast it lightly for 2 minutes.
- 3. Add 250 ml of water, coconut milk, cumin powder, turmeric powder, and a pinch of salt to the quinoa. Bring to a boil, then simmer for 15 minutes until cooked.
- 4. While the quinoa is cooking, slice the red and yellow bell peppers into thin strips and dice the tomatoes finely.
- 5. Heat 1 tablespoon of olive oil in a pan, add the bell peppers, tomatoes, paprika, and black pepper. Stir-fry for 5-7 minutes until tender.
- 6. Cut the firm tofu into thick slices, pat them dry, and season with lemon juice, a pinch of salt, and black pepper.
- 7. Heat a grill pan or regular pan over medium heat and grill the tofu slices for 3-4 minutes on each side until golden brown.
- 8. Once the quinoa is cooked, fluff it with a fork and mix in the stir-fried peppers and tomatoes.
- 9. Plate the spiced bell pepper quinoa, and top it with the grilled tofu slices for a vibrant presentation.
- 10. Garnish with freshly chopped coriander and serve warm with an optional wedge of lemon on the side.
