Instructions

  1. 1. Clean the portobello mushroom caps carefully and pat them dry with a kitchen towel.
  2. 2. In a bowl, mix olive oil, soy sauce, balsamic vinegar, 2 minced garlic cloves, and paprika.
  3. 3. Brush the marinade generously over both sides of the mushroom caps and let them sit for 10 minutes.
  4. 4. While the mushrooms marinate, heat a pan and sauté the remaining garlic in 1 tablespoon olive oil until fragrant.
  5. 5. Add cooked brown rice, vegetable broth, nutritional yeast, salt, and black pepper to the pan.
  6. 6. Stir the rice mixture well and cook over medium heat until the liquid is absorbed, then mix in fresh parsley.
  7. 7. Preheat a grill pan on medium-high heat and lightly oil the surface to prevent sticking.
  8. 8. Place the marinated mushrooms on the grill pan and cook for 3-4 minutes on each side until tender and grill marks appear.
  9. 9. Remove the mushrooms from the grill and drizzle with lemon juice for added brightness.
