- 720G Perello Alargada White Beans, 720G
- 250 ml Critida Lemon Infused Olive Oil 250Ml
- 100 G Jumbo Garlic 100g
- 50G Pepper Black Ground BWFO
- 500G Daylesford Organic Lamb Loin Chops
- 100G Terre Exotique Winemaker'S Salt, 100G
Instructions
- 1. Rub the lamb chops with 1 teaspoon salt, 1/2 teaspoon black pepper, and 3 tablespoons olive oil. Preheat a grill or grill pan until very hot.
- 2. Place the lamb chops on the grill and cook for 3 to 4 minutes per side for medium-rare, or until your desired doneness. Remove from heat and let rest for 5 minutes.
- 3. While the lamb chops are grilling, drain and rinse 1 can of white beans. Heat 2 tablespoons olive oil in a skillet over medium heat.
- 4. Add 2 sprigs of rosemary and 1 minced clove of garlic to the skillet. Cook for 1 minute until fragrant, then add the white beans and stir to coat.
- 5. Add 2 tablespoons of water to the skillet and bring to a simmer. Cook until the water evaporates and the beans are soft, about 5 minutes.
- 6. Stir in 3 tablespoons of crème fraîche and cook on high heat for 2 minutes, until the beans are creamy and well-coated.
- 7. Remove the skillet from heat and stir in 6 chopped basil leaves, reserving a few for garnish.
- 8. Serve the lamb chops over the creamy beans, garnish with the reserved basil leaves, and sprinkle with freshly ground black pepper.
