- 250 G Long Aubergine/Brinjal - 250g
- 270G Akagi Dried Soba Noodles, 270G
- 28G Nori Sheets, 28G
- 10G Avocado Leaves, 10G
- 1 Piece Cucumber 1Pc
- 1 Bunch Spring Onions 1 Bunch
- - Schwartz Sesame Seeds
- 187 Ml Pure Maple Syrup, 187Ml
- - Ginger - 100g
- 160 Ml Cj Bibigo Sesame Oil
- - Kikkoman Soy Sauce
- 120 Ml Lee Kee Seasoned Rice Vinegar 120ml
- 1Pc Avacado 1pc
Instructions
- 1. Slice the aubergine into thin strips and lightly brush them with sesame oil.
- 2. Heat a grill pan and cook the aubergine strips for 3-4 minutes on each side until tender and lightly charred.
- 3. Boil the soba noodles as per package instructions, then drain and rinse with cold water to stop cooking.
- 4. In a small bowl, mix soy sauce, rice vinegar, maple syrup, and grated ginger to create a dressing.
- 5. Toss the cooked soba noodles with the dressing and sprinkle with sesame seeds for added flavor.
- 6. Slice the cucumber and avocado into thin strips and chop the spring onions finely.
- 7. Lay a nori sheet flat on a clean surface and arrange grilled aubergine strips, soba noodles, cucumber, avocado, and spring onions on one side.
- 8. Carefully roll the nori sheet into a wrap, sealing the edge with a small amount of water to hold it together.
- 9. Repeat the process for the remaining nori sheets and ingredients.
- 10. Slice each wrap into halves for easier handling and presentation.
- 11. Serve the wraps on a plate, optionally garnished with extra sesame seeds and a small bowl of soy sauce for dipping.
