- 80 g Soya Chunks
- 200 g Dahi
- 200 g Paneer
- 100 g Yellow Mustard Seeds
- 1 kg Rice
- 200 G Amul Fresh Malai Paneer 200 G
- 120G Alpenzu Clarified Butter, 120G
- 100G East End Cumin Whole Seeds
- 400G Koko Dairy Free Plain Yogurt Alternative

Instructions
- 1. Soak the soy chunks in warm water for 15 minutes, then squeeze out the excess water and set aside.
- 2. Rinse the rice thoroughly under running water until the water runs clear.
- 3. In a pot, heat 5g of ghee and add cumin seeds. Allow them to sizzle and release their aroma.
- 4. Add the rinsed rice to the pot, stir briefly, and pour in 320ml of water. Cover and cook on low heat until the rice is fluffy and cooked through.
- 5. Heat the remaining 5g of ghee in a pan. Add chopped garlic, ginger, and green chili, and sauté until fragrant.
- 6. Add finely chopped onion to the pan and cook until it turns golden brown.
- 7. Stir in chopped tomato, turmeric powder, red chili powder, coriander powder, and salt. Cook until the mixture forms a thick masala base.
- 8. Add the soaked soy chunks to the pan and mix well to coat them with the masala.
- 9. Add the spinach leaves and cook until they wilt and blend with the masala and soy chunks.
- 10. Sprinkle garam masala over the stir-fry and mix well to evenly distribute the spices.
- 11. Garnish the stir-fry with freshly chopped coriander leaves.
- 12. Serve the warm soy chunk and spinach stir-fry alongside the fragrant jeera rice for a wholesome meal.
