Ingredients

  • 1.5 Kg Natco Cornmeal Medium, 1.5Kg
  • 1 Kg Caputo Cuor Di Cerali, 1Kg
  • 60G Terre Exotique Cheeselovers Pepper, 60G
  • 2.27L / 4 Pints British Whole Milk 2.27L / 4 Pints
  • Pack Tray Of 30 Medium Free Range Eggs
  • 240G Salmon Fillets With Lemon & Pepper Butter
  • - Sunita Lemon Juice Organic
  • 100G Terre Exotique Winemaker'S Salt, 100G
  • - Ktc Vegetable Oil

Instructions

  1. 1. Remove the bones and skin from the salmon, then flake it into small pieces using a fork. Sprinkle the flaked salmon with lemon juice and set aside.
  2. 2. In a mixing bowl, sift together 1 cup of cornmeal, 1/4 cup of flour, 1 teaspoon of salt, and 1/2 teaspoon of pepper.
  3. 3. Add 1/2 cup of milk and 1 egg to the dry ingredients. Beat the mixture until it forms a smooth batter.
  4. 4. Fold the flaked salmon into the batter, ensuring it is evenly coated.
  5. 5. Heat oil in a frying pan over medium heat. Once the oil is hot, drop the salmon batter by tablespoons into the pan.
  6. 6. Fry each croquette for 3 to 4 minutes on each side, or until golden brown and crispy.
  7. 7. Remove the croquettes from the pan and drain them on paper towels to remove excess oil.
  8. 8. Serve the croquettes warm with your favorite dipping sauce or a side of fresh salad.
