Ingredients
- 500G Aunt Bessie'S Maple & Thyme Glazed Carrots
- 250G Tilda Microwave Pilau Basmati Rice 250g
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 250 ml Critida Lemon Infused Olive Oil 250Ml
- 1 Kg Golden Raisins, 1Kg
- 100G Terre Exotique Winemaker'S Salt, 100G
Instructions
- 1. Wash 3 cups of basmati rice in several changes of cold water in a bowl until the water runs almost clear. Soak the rice in cold water for 1 hour, then drain well in a sieve.
- 2. While the rice soaks, heat 3 tablespoons of olive oil in a wide 5- to 6-quart heavy pot over medium-high heat. Add 1 diced onion and cook, stirring occasionally, until pale golden, about 5 minutes.
- 3. Add 1 diced onion to the pot and cook until softened and fragrant, about 5 minutes. Add 1 cup of water and bring to a simmer. Cover the pot and reduce the heat to low, stirring occasionally, for about 45 minutes.
- 4. Stir in the drained rice, 1 pack of maple & thyme glazed carrots, 1 cup of raisins, and 2 teaspoons of salt. Add enough water to cover the mixture by 1 inch (about 3 1/2 to 4 cups) and bring to a boil, uncovered, over medium-high heat.
- 5. Wrap a kitchen towel around the lid with the ends of the towel on top, then cover the pot and boil over medium heat for 10 minutes. Reduce the heat to low and simmer, covered, until the rice is tender and the liquid has been absorbed, about 30 minutes.
- 6. Fluff the rice with a fork and transfer the pilaf to a large platter. Serve hot and enjoy your gluten-free meal.
