- 500 G Fresh Vine Tomato 500g
- 1 piece Yellow Bell Pepper
- 1 L Olive Oil – Organic
- 100 G East End Garlic Powder
- 100 G Natco Paprika Powder
- 750 G Top-Op Table Salt Drums
- - Natco Black Pepper Whole
Instructions
- 1. Preheat the oven to 200°C and line a baking tray with parchment paper.
- 2. Cut the cherry tomatoes in half, slice the zucchini into rounds, and chop the red bell pepper into chunks.
- 3. Toss the vegetables with 1 tablespoon of olive oil, 0.5 teaspoon of salt, and a pinch of black pepper; spread evenly on the prepared tray.
- 4. Roast the vegetables in the oven for 20 minutes, stirring halfway through to ensure even cooking.
- 5. While the vegetables are roasting, bring the vegetable stock to a boil in a medium saucepan.
- 6. Gradually whisk the polenta into the boiling stock, stirring continuously to prevent lumps.
- 7. Lower the heat and simmer the polenta for 10 minutes, stirring occasionally, until it becomes creamy and smooth.
- 8. Cut the tofu into small cubes and toss with 1 tablespoon of olive oil, garlic powder, paprika, and dried oregano.
- 9. Heat a non-stick skillet over medium heat and sauté the tofu cubes for 6-8 minutes, turning occasionally, until golden and crispy.
- 10. Season the polenta with a pinch of salt and black pepper, adjusting to taste, and remove from heat.
- 11. Plate the creamy polenta as the base, then layer the roasted vegetables and crispy tofu cubes on top.
- 12. Garnish with a sprinkle of dried oregano or a drizzle of olive oil before serving.
