  • 500 G Fresh Vine Tomato 500g
  • 1 piece Yellow Bell Pepper
  • 1 L Olive Oil – Organic
  • 100 G East End Garlic Powder
  • 100 G Natco Paprika Powder
  • 750 G Top-Op Table Salt Drums
  • - Natco Black Pepper Whole

Instructions

  1. 1. Preheat the oven to 200°C and line a baking tray with parchment paper.
  2. 2. Cut the cherry tomatoes in half, slice the zucchini into rounds, and chop the red bell pepper into chunks.
  3. 3. Toss the vegetables with 1 tablespoon of olive oil, 0.5 teaspoon of salt, and a pinch of black pepper; spread evenly on the prepared tray.
  4. 4. Roast the vegetables in the oven for 20 minutes, stirring halfway through to ensure even cooking.
  5. 5. While the vegetables are roasting, bring the vegetable stock to a boil in a medium saucepan.
  6. 6. Gradually whisk the polenta into the boiling stock, stirring continuously to prevent lumps.
  7. 7. Lower the heat and simmer the polenta for 10 minutes, stirring occasionally, until it becomes creamy and smooth.
  8. 8. Cut the tofu into small cubes and toss with 1 tablespoon of olive oil, garlic powder, paprika, and dried oregano.
  9. 9. Heat a non-stick skillet over medium heat and sauté the tofu cubes for 6-8 minutes, turning occasionally, until golden and crispy.
  10. 10. Season the polenta with a pinch of salt and black pepper, adjusting to taste, and remove from heat.
