- 1 Kg Jj Large Prawns (90/120, 700g Net) 1x1kg
- 4 Per Pack Giga Apples
- 650G Daylesford Organic Smoked Salmon Side
- 395G Heinz Mayonnaise 395g
- 50G Pepper Black Ground BWFO
- - Wholefood Earth Thompson Seedless Raisins
- - Fresh Asian Coriander Bunch
Instructions
- 1. Shell and devein 800 g of prawns, then rinse them thoroughly.
- 2. Blanch the prawns in boiling water for 2-3 minutes until they turn pink, then transfer them immediately to a bowl of cold water to stop the cooking process.
- 3. Cut the prawns in half lengthwise and set them aside.
- 4. Peel 1 Giga apple, cut it into small cubes, and place the cubes in a bowl of water to prevent browning.
- 5. In a mixing bowl, combine the drained apple cubes, 2 tablespoons of mayonnaise, 1 teaspoon of coriander, and a pinch of ground black pepper. Mix well.
- 6. On a serving platter, shape the mixture into the form of a fish, pressing gently to hold the shape.
- 7. Arrange the halved prawns over the mixture to create a scale-like pattern, starting from the tail and working towards the head.
- 8. Use 3 slices of smoked salmon to form the fins and mouth: cut two slices into fin shapes and roll the third slice to form the mouth.
- 9. Skip the grape decoration and leave the mouth area plain.
- 10. Garnish the tail area with a few raisins for added texture and sweetness.
- 11. Serve the salad chilled as a centerpiece for your dinner table.
