  • 1 Halloumi Cheese
  • 1 Kg Baby Potatoes 1kg
  • 1 piece Yellow Bell Pepper
  • 1 Bunch Spinach Fresh 1 Bunch
  • - Biona Organic Whole Cherry Tomatoes
  • 1 L Olive Oil – Organic
  • 100 G Jumbo Garlic 100g
  • - Greenfields Black Peppercorns
  • 100 G Natco Paprika Powder
  • 400G Whole Chickpeas In Water

Instructions

  1. 1. Wash and halve the baby potatoes, then boil them in salted water until just tender, about 10 minutes.
  2. 2. While the potatoes cook, dice the halloumi into bite-sized cubes and chop the red bell pepper into small pieces.
  3. 3. Heat 1 tablespoon of olive oil in a large skillet over medium heat and sauté the halloumi until golden on all sides, about 5 minutes.
  4. 4. Remove the halloumi from the skillet and set aside. Add the remaining olive oil to the skillet.
  5. 5. Drain the boiled potatoes and add them to the skillet, cooking until crispy and golden, about 7 minutes.
  6. 6. Add the chopped red bell pepper and minced garlic to the skillet and sauté for 3 minutes until softened.
  7. 7. Toss in the cherry tomatoes and cook for another 2 minutes, allowing them to blister slightly.
  8. 8. Return the halloumi to the skillet, then stir in the spinach and cook until wilted, about 2 minutes.
  9. 9. Sprinkle the paprika, salt, and black pepper over the mixture, stirring well to combine all the flavors.
