- - Schwartz Flat Leaf Parsley
- 1 Halloumi Cheese
- 1 Kg Baby Potatoes 1kg
- 1 piece Yellow Bell Pepper
- 1 Bunch Spinach Fresh 1 Bunch
- - Biona Organic Whole Cherry Tomatoes
- 1 L Olive Oil – Organic
- 100 G Jumbo Garlic 100g
- - Greenfields Black Peppercorns
- 100 G Natco Paprika Powder
- 400G Whole Chickpeas In Water
Instructions
- 1. Wash and halve the baby potatoes, then boil them in salted water until just tender, about 10 minutes.
- 2. While the potatoes cook, dice the halloumi into bite-sized cubes and chop the red bell pepper into small pieces.
- 3. Heat 1 tablespoon of olive oil in a large skillet over medium heat and sauté the halloumi until golden on all sides, about 5 minutes.
- 4. Remove the halloumi from the skillet and set aside. Add the remaining olive oil to the skillet.
- 5. Drain the boiled potatoes and add them to the skillet, cooking until crispy and golden, about 7 minutes.
- 6. Add the chopped red bell pepper and minced garlic to the skillet and sauté for 3 minutes until softened.
- 7. Toss in the cherry tomatoes and cook for another 2 minutes, allowing them to blister slightly.
- 8. Return the halloumi to the skillet, then stir in the spinach and cook until wilted, about 2 minutes.
- 9. Sprinkle the paprika, salt, and black pepper over the mixture, stirring well to combine all the flavors.
- 10. Garnish with freshly chopped parsley before serving warm on plates.
