- 500 Ml Clearspring Organic Rapeseed Oil, 500Ml

- 250G Tilda Wild Rice
Instructions
- 1. Remove the dark green parts from 1 bunch of spring onions, thinly slice them, and set aside. Thinly slice the white and pale green parts and set aside separately.
- 2. Heat 2 tablespoons of rapeseed oil in a large nonstick skillet over medium heat. Add 1 cup of cooked brown rice, breaking up any lumps, and pat it down into an even layer. Cook undisturbed for 2 minutes until beginning to crisp.
- 3. Toss the rice and continue cooking, adding 1 bunch of kale (stems removed, leaves chopped) by handfuls. Let each batch wilt slightly before adding more, tossing occasionally until the rice is heated through and the kale is fully wilted, about 3 minutes. Season with 1/2 teaspoon kosher salt and transfer to a plate.
- 4. Heat the remaining 1 tablespoon of rapeseed oil in the same skillet. Add 2 minced garlic cloves and 1 tablespoon of peeled and grated turmeric root. Cook, stirring often, until softened and fragrant, about 2 minutes.
- 5. Sprinkle 1 teaspoon of ground turmeric over the aromatics, then stir in 3 tablespoons of chickpea flour mixed with water to create a batter. Use a heatproof spatula to gently blend the mixture. Season with 1/4 teaspoon kosher salt and cook, stirring gently, until the batter is barely set.
- 6. Return the rice and kale to the skillet and toss to combine. Cook, tossing occasionally, until hot. Add 1 tablespoon of lime juice and adjust seasoning with kosher salt as needed.
- 7. Divide the fried rice between plates and serve with lime wedges for squeezing over.
