Instructions
- 1. Clean the fish fillets and pat them dry with a paper towel.
- 2. Prepare the marinade by mixing yogurt, turmeric, coriander powder, cumin powder, garam masala, red chili powder, garlic paste, lemon juice, and salt in a bowl.
- 3. Coat the fish fillets evenly with the marinade and let them rest for 15 minutes.
- 4. Rinse and cook quinoa in boiling water with a pinch of salt until fluffy, then drain and set aside.
- 5. Heat olive oil in a grill pan and cook the marinated fish fillets for 4-5 minutes on each side until golden and cooked through.
- 6. In another pan, sauté sliced onions and diced tomatoes with a pinch of salt and chili powder for 3-4 minutes.
- 7. Mix the sautéed vegetables into the cooked quinoa, ensuring even distribution.
- 8. Plate the spiced quinoa and top it with the grilled fish tikka.
- 9. Garnish with freshly chopped coriander before serving.
