- Pack Tray Of 30 Medium Free Range Eggs
- 500 g Tuna Yellow Fin Steaks 500 Gr
- 653G Mccain Baby Hasselback Potatoes Salt & Pepper
- 1 Bunch Spring Onions 1 Bunch
- - Ktc Vegetable Oil
- 1.5 Kg Best In Plain Flour 1.5 Kg
Instructions
- 1. Soak 1 lb codfish in water overnight to remove excess salt.
- 2. Drain the water, replace with fresh water, and boil the codfish for 10 minutes. Drain and flake the codfish into small pieces.
- 3. Boil 3 medium potatoes until tender, then mash them until smooth.
- 4. In a frying pan, heat 2 tbsp oil over medium heat and sauté 1 diced onion, 3 finely chopped scallion stalks, and 2 minced hot peppers until softened, about 5 minutes.
- 5. In a large bowl, combine the flaked codfish, mashed potatoes, sautéed vegetables, 8 oz flaked cooked tuna, and 1 beaten egg. Mix thoroughly until well combined.
- 6. Shape the mixture into small balls, then flatten slightly to form patties. Lightly coat each patty in flour.
- 7. Heat enough oil in a frying pan to shallow fry the patties. Once the oil is hot, fry the patties in batches, about 3-4 minutes per side, until golden brown and crispy.
- 8. Remove the patties from the pan and drain on paper towels. Repeat with the remaining patties.
- 9. Serve the golden codfish and tuna cakes warm with your favorite dipping sauce or a side salad.
