Instructions
- 1. Drain and rinse the canned chickpeas thoroughly under cold water.
- 2. Dice the red bell pepper, courgette, and red onion into small, even pieces.
- 3. Halve the cherry tomatoes and finely chop the garlic cloves.
- 4. Heat the olive oil in a large skillet or air fryer-safe pan on medium heat for about 2 minutes.
- 5. Add the diced onion and garlic to the heated oil and sauté until fragrant and slightly softened, about 4 minutes.
- 6. Stir in the paprika, turmeric, cumin, salt, and black pepper, cooking for another 1-2 minutes to bloom the spices.
- 7. Add the diced red bell pepper, courgette, and cherry tomatoes to the skillet, stirring well to coat with the spices.
