Instructions

  1. 1. Heat 1 tablespoon of oil in a large skillet over medium heat.
  2. 2. Add 1 diced onion and 1 diced green pepper to the skillet. Sauté for 3-4 minutes until softened.
  3. 3. Add 225 g (1/2 lb) of ground beef to the skillet. Crumble the meat and cook until browned and fully cooked, about 5-7 minutes.
  4. 4. Season the mixture with 1/2 teaspoon of salt and 1/4 teaspoon of pepper, stirring to combine.
  5. 5. Add 1 cup of uncooked quinoa to the skillet and stir over low heat for about 2 minutes, until the quinoa becomes slightly translucent.
  6. 6. Slowly pour in 1 can of gluten-free beef broth. Stir, cover, and simmer on low heat for about 15 minutes, or until the quinoa is tender and the liquid is absorbed.
  7. 7. Remove from heat and let sit for 5 minutes before serving. Optionally, sprinkle with grated Parmesan cheese for added flavor.
