Instructions
- 1. Heat 1 tablespoon of oil in a large skillet over medium heat.
- 2. Add 1 diced onion and 1 diced green pepper to the skillet. Sauté for 3-4 minutes until softened.
- 3. Add 225 g (1/2 lb) of ground beef to the skillet. Crumble the meat and cook until browned and fully cooked, about 5-7 minutes.
- 4. Season the mixture with 1/2 teaspoon of salt and 1/4 teaspoon of pepper, stirring to combine.
- 5. Add 1 cup of uncooked quinoa to the skillet and stir over low heat for about 2 minutes, until the quinoa becomes slightly translucent.
- 6. Slowly pour in 1 can of gluten-free beef broth. Stir, cover, and simmer on low heat for about 15 minutes, or until the quinoa is tender and the liquid is absorbed.
- 7. Remove from heat and let sit for 5 minutes before serving. Optionally, sprinkle with grated Parmesan cheese for added flavor.
