- 50G Natoora Fresh Italian Flat Leaf Parsley
- 500G White Pearl Italian Pudding Rice 500g
- 240G Salmon Fillets With Lemon & Pepper Butter
- 10 Pack Purely Organic Free Range Mixed Weight Eggs 10 Per Pack
Instructions
- 1. Rinse 1 1/4 cups of rice under cold water until the water runs clear, then cook it in a pot of boiling water according to package instructions. Drain and set aside.
- 2. While the rice cooks, bring a small pot of water to a boil. Add 2 eggs and boil for 9-10 minutes until hard-boiled. Cool the eggs under cold running water, peel, and chop them.
- 3. Heat a non-stick pan over medium heat and cook 250 g of salmon fillet for 3-4 minutes on each side until fully cooked. Remove the skin, if any, and flake the salmon into bite-sized pieces.
- 4. In a large bowl, combine the cooked rice and flaked salmon. Cover the bowl and let it sit for 5 minutes to allow the flavors to meld.
- 5. Transfer the rice and salmon mixture to a serving dish. Sprinkle with 2 tablespoons of finely chopped parsley and the chopped hard-boiled eggs. Serve warm.
