  1. 1. Cut 2 cloves of garlic, 1 green pepper, 1 red pepper, 2 onions, and 3 stalks of celery into small pieces.
  2. 2. Heat 2 tablespoons of butter or margarine in a large skillet over medium heat. Add the chopped garlic, green pepper, red pepper, onions, and celery. Saute for 5-7 minutes until the vegetables are tender.
  3. 3. In a separate pan, heat 1 tablespoon of oil over medium-high heat. Add 1 lb of pork, cut into strips, and cook for 6-8 minutes until browned and fully cooked.
  4. 4. Combine the cooked vegetables and pork in one pan. Stir in 1/4 teaspoon of curry powder, 1 teaspoon of salt, and 1 tablespoon of gluten-free soy sauce. Mix well to coat everything evenly.
  5. 5. Add 1/4 cup of cashews to the pan and reduce the heat to low. Simmer for about 25 minutes, stirring occasionally to allow the flavors to meld.
