Instructions
- 1. Core the cabbage and place it in boiling salted water until 12 outer leaves can be separated. Set the leaves aside and reserve the water. Chop the remaining cabbage.
- 2. In a bowl, mix 1 lb ground beef, 1 cup cooked quinoa, 1/4 cup minced onion, 1 tsp salt, 1/4 tsp pepper, 1 tsp hot pepper sauce, and 1 egg until well combined.
- 3. Divide the beef mixture into 12 portions and place each portion in a cabbage leaf. Fold in the sides and roll up to form cabbage rolls.
- 4. Arrange the cabbage rolls seam-side down in a 2-quart casserole dish on top of the chopped cabbage.
- 5. Heat 2 tbsp butter in a skillet over medium heat. Sauté 1 clove minced garlic, 1/4 cup chopped onion, and 1/4 cup chopped bell pepper for 2-3 minutes.
- 6. Add 1 lb chopped tomatoes, 1 tbsp honey, and 1/4 cup lemon juice to the skillet. Simmer gently for 10 minutes, then stir in 1 cup of the reserved cabbage water.
- 7. Pour the tomato mixture over the cabbage rolls in the casserole dish. Cover the dish with a lid or foil.
- 8. Bake the cabbage rolls in a preheated oven at 350°F for about 1 hour.
