Ingredients

  • 600 Ml Bristol Syrup Co Lime Juice, 600Ml
  • 400 Ml Coconut Merchant Organic Coconut Cream
  • 1 L Crisp N Dry Oil
  • 290G Portland Mills Jamaican Curry Powder, 290G
  • NaN Trs Rice Flour

Instructions

  1. 1. Bring a large saucepan of salted water to a boil and add 200 g of gluten-free rice noodles. Cook over medium-high heat, stirring occasionally, for 10 minutes, or until al dente.
  2. 2. Drain the noodles in a colander and rinse with cold water. Place the noodles in a resealable bag and refrigerate until ready to use.
  3. 3. Remove the seeds and membranes from 1/2 red bell pepper and 1/2 yellow bell pepper, then cut the peppers into thin slices.
  4. 4. Peel 1 onion and cut into thin slices. Peel and finely chop 2 cloves of garlic.
  5. 5. Heat 1 tablespoon of coconut cream in a large skillet over medium-high heat. Add the bell peppers, onion, and garlic, and cook, stirring frequently, for 12 to 15 minutes, or until the onion is translucent and the peppers are beginning to soften.
  6. 6. Remove the skillet from the heat and let the vegetables cool. Cover and refrigerate until ready to use.
  7. 7. Fifteen minutes before mealtime, place the skillet with the vegetables over medium heat and cook for 2 minutes, or until the vegetables begin to warm up.
  8. 8. Add 1 cup of coconut cream, 1/4 cup of lime juice, and 1 teaspoon of curry powder to the skillet. Cook for 3 to 4 minutes, or until the sauce just begins to bubble.
  9. 9. Add the rice noodles to the skillet and stir until thoroughly coated. Cook for 4 to 5 minutes, or until the noodles are warm.
  10. 10. Spoon the noodles onto plates, ensuring there are pieces of pepper on top. Serve immediately.
