Instructions

  1. 1. Rinse the chicken thighs and pat them dry with a paper towel to remove excess moisture.
  2. 2. Peel and finely grate the ginger and garlic, then combine them with soy sauce, honey, sesame oil, black pepper, and rock salt in a bowl.
  3. 3. Marinate the chicken thighs in the ginger-soy mixture for 15 minutes to infuse them with flavor.
  4. 4. While the chicken marinates, rinse the rice thoroughly and cook it with water until tender, about 15 minutes.
  5. 5. Toast the sesame seeds in a dry pan over medium heat until golden and fragrant, then set aside for garnish.
  6. 6. Heat a non-stick skillet over medium-high flame and sear the marinated chicken thighs skin-side down for 3-4 minutes until caramelized.
  7. 7. Flip the chicken thighs and pour the remaining marinade into the skillet, letting it simmer for 10 minutes until the chicken is cooked through.
  8. 8. Fluff the cooked rice with a fork and mix in 1 teaspoon of sesame oil and half of the toasted sesame seeds.
  9. 9. Slice the scallions finely and sprinkle them over the sesame rice for a fresh, aromatic touch.
  10. 10. Plate the sesame rice, place the glazed chicken thighs on top, and drizzle any remaining glaze from the skillet over the chicken.
  11. 11. Garnish with the remaining toasted sesame seeds and serve immediately while hot.
