- 1 Garlic Bulb - 1 Each
- 150G Blue Earth Foods Coldwater Prawns
- 1 Lemon - 1 Each
- 500G Tropical Sun Basmati Rice 500g
- - Knorr Stock Cubes Vegetable
- - Biona Capers In Olive Oil
- - Maldon Flakes Sea Salt
- 100G Heera Black Pepper Powder 100g
- - Schwartz Flat Leaf Parsley
Instructions
- 1. Rinse the rice thoroughly under cold water to remove excess starch.
- 2. Heat a saucepan with 1 tbsp olive oil and sauté 2 minced garlic cloves until fragrant.
- 3. Add the rice to the saucepan and stir to coat with the garlic and oil.
- 4. Pour in the vegetable stock, bring to a boil, then reduce heat and cover to simmer for 15 minutes.
- 5. Meanwhile, marinate the prawns with 1 tbsp olive oil, 2 minced garlic cloves, juice of half a lemon, salt, and pepper.
- 6. Heat a frying pan or air fryer, and cook the marinated prawns for 4-5 minutes until pink and cooked through.
- 7. Finely chop fresh parsley and set aside for garnish.
- 8. Once the rice is cooked, fluff it with a fork and mix in the zest of half a lemon and remaining lemon juice.
- 9. Plate the lemon rice on a serving dish and arrange the garlic herb prawns on top.
- 10. Garnish with the chopped parsley and serve immediately while hot.
