Ingredients

  • 1 Garlic Bulb - 1 Each
  • 150G Blue Earth Foods Coldwater Prawns
  • 1 Lemon - 1 Each
  • 500G Tropical Sun Basmati Rice 500g
  • - Knorr Stock Cubes Vegetable
  • - Biona Capers In Olive Oil
  • - Maldon Flakes Sea Salt
  • 100G Heera Black Pepper Powder 100g
  • - Schwartz Flat Leaf Parsley

Instructions

  1. 1. Rinse the rice thoroughly under cold water to remove excess starch.
  2. 2. Heat a saucepan with 1 tbsp olive oil and sauté 2 minced garlic cloves until fragrant.
  3. 3. Add the rice to the saucepan and stir to coat with the garlic and oil.
  4. 4. Pour in the vegetable stock, bring to a boil, then reduce heat and cover to simmer for 15 minutes.
  5. 5. Meanwhile, marinate the prawns with 1 tbsp olive oil, 2 minced garlic cloves, juice of half a lemon, salt, and pepper.
  6. 6. Heat a frying pan or air fryer, and cook the marinated prawns for 4-5 minutes until pink and cooked through.
  7. 7. Finely chop fresh parsley and set aside for garnish.
  8. 8. Once the rice is cooked, fluff it with a fork and mix in the zest of half a lemon and remaining lemon juice.
