Ingredients
- - Schwartz Flat Leaf Parsley
- 1 Kg Jj Large Prawns (90/120, 700g Net) 1x1kg
- 500 g Planet Organic Courgettes 500G
- 100 G Jumbo Garlic 100g
- 1 L Olive Oil – Organic
- - Lurpak Unsalted Butter
- - PLJ Lemon Juice Original Sharp 500ml
- - Greenfields Black Peppercorns
- - Rajah Whole Red Chillies
Instructions
- 1. Wash and spiralize the zucchini into noodles, then set aside.
- 2. Peel and finely mince the garlic cloves for the sauce.
- 3. Heat olive oil in a large pan over medium heat and sauté the minced garlic until fragrant, about 1-2 minutes.
- 4. Add the prawns to the pan, season with salt, pepper, and chili flakes, and cook for 2-3 minutes per side until pink and opaque.
- 5. Remove the prawns from the pan and set aside on a plate to avoid overcooking.
- 6. Reduce heat to low and melt the butter in the same pan, stirring to combine with the garlic and oil.
- 7. Return the prawns to the pan and toss them in the garlic butter sauce for 1 minute to coat evenly.
- 8. Add the zucchini noodles to the pan and toss gently for 2-3 minutes until lightly softened.
- 9. Stir in fresh lemon juice and sprinkle with chopped parsley for a burst of flavor.
- 10. Serve the garlic butter prawns over the zucchini noodles and garnish with additional parsley if desired.
