Instructions
- 1. Rinse the lentils under cold water until the water runs clear, then set them aside.
- 2. Peel and dice the carrots, slice the celery, and chop the leek into small pieces.
- 3. Heat olive oil in a large pan over medium heat and sauté the garlic until fragrant.
- 4. Add the chopped vegetables to the pan and cook for 5-7 minutes, stirring occasionally.
- 5. Stir in the rinsed lentils and pour in the vegetable stock and canned tomatoes.
- 6. Sprinkle the mixture with Herbs De Provence, salt, and black pepper, and bring to a simmer.
