Ingredients
- 1 Kg Red Onion 1kg
- 50G Black Garlic Cloves, 50G
- - Ginger - 100g
- - Jalpur Coriander Powder Dhana Powder
- - Mccormick Cumin Powder
- 400 g Trs Turmeric Powder 400G
- - Rajah Whole Red Chillies
- 100 g Wijaya Coriander Seeds 100G
- - Forest Whole Foods Organic White Quinoa
- - Potts Vegetable Stock Can
- 1 L Olive Oil – Organic
- - Greenfields Black Peppercorns
Instructions
- 1. Finely chop the onion, garlic, ginger, and fresh coriander leaves for the kofta mixture.
- 2. In a mixing bowl, combine ground lamb, onion, garlic, ginger, coriander powder, cumin powder, turmeric, chili powder, and chopped coriander leaves.
- 3. Mix the lamb and spices thoroughly, then form into small, round kofta balls.
- 4. Heat olive oil in a skillet over medium heat and gently fry the kofta until golden brown and cooked through.
- 5. Rinse quinoa under cold water and drain thoroughly before cooking.
- 6. Bring vegetable stock to a boil in a saucepan, then add the rinsed quinoa and reduce heat to a simmer.
- 7. Cook the quinoa for 15 minutes, stirring occasionally, until fluffy and the stock is absorbed.
- 8. Season the cooked quinoa with salt, black pepper, and a pinch of cumin powder for added flavor.
- 9. Plate the quinoa in serving bowls and arrange the cooked kofta on top.
- 10. Garnish with additional fresh coriander leaves and serve warm.
