- 50G Black Garlic Cloves, 50G
- 100 g Wijaya Coriander Seeds 100G
- 100 G Trs Ground Cumin Jeera Powder
- - Greenfields Ground Coriander
- - Jalpur Red Chilli Powder Fine
- - Greenfields Black Peppercorns
- 450G Rice Flour, 450G
- 1 L Olive Oil – Organic
- 200 G Authentic Greek Yogurt
- 25G Natco Mint
- - PLJ Lemon Juice Original Sharp 500ml
- 1 Piece Cucumber 1Pc
- NaN Top Op Suva Dill Seeds
Instructions
- 1. Finely chop the red onion, garlic, and coriander leaves, ensuring even distribution in the mix.
- 2. In a large bowl, combine ground lamb with onion, garlic, coriander leaves, cumin, coriander powder, chili powder, salt, pepper, and rice flour.
- 3. Mix the lamb mixture thoroughly with your hands until well combined and form into small oval-shaped kofta pieces.
- 4. Heat olive oil in a non-stick skillet over medium heat and carefully place the kofta pieces into the pan.
- 5. Cook the kofta for 8-10 minutes, turning occasionally to ensure even browning and cooking on all sides.
- 6. While the kofta are cooking, prepare the minted yogurt sauce by blending Greek yogurt, mint leaves, lemon juice, and a pinch of salt until smooth.
- 7. Slice the cucumber thinly and toss it with freshly chopped dill to create a crisp salad.
- 8. Remove the kofta from the skillet and let them rest for a minute before plating.
- 9. Serve the lamb kofta with a dollop of minted yogurt sauce and the cucumber salad on the side.
- 10. Garnish with additional coriander leaves or mint for a fresh, vibrant touch.
