Instructions
- 1. Rinse the basmati rice thoroughly and soak it in water for 20 minutes, then drain and set aside.
- 2. Heat oil in a heavy-bottomed pan and fry sliced onions until golden and caramelized; remove half for garnishing.
- 3. Add garlic, ginger paste, and green chilies to the pan, sauté until fragrant, stirring continuously.
- 4. Mix in chopped tomatoes, turmeric powder, red chili powder, coriander powder, and garam masala, cooking until the oil separates.
- 5. Add chicken thighs and cook until lightly browned and coated with the spice mixture.
- 6. Pour in water to cover the chicken, season with salt, and simmer until the chicken is tender and cooked through.
- 7. In a separate pot, boil water with bay leaves, cloves, cardamom pods, and cinnamon stick; add the soaked rice and cook until 80% done.
- 8. Layer the par-cooked rice evenly over the chicken mixture, topping with reserved caramelized onions, fresh mint, and coriander leaves.
- 9. Cover the pan tightly with a lid and cook on low heat for 15 minutes to allow flavors to meld and rice to steam completely.
- 10. Remove from heat and let the biryani rest for 5 minutes before gently fluffing with a fork.
- 11. Serve hot, garnished with additional fresh coriander leaves and accompanied by a cooling raita or salad.
