- 450 G English Cucumber 450-550g
- 500G Organic Red Quinoa, 500G
- 3 Pack Fresh Lemon Pack Of 3
- 20G Epazote, 20G
- - Marnoto Hand Harvest Fine Sea Salt
Instructions
- 1. Rinse 1 cup of quinoa thoroughly under cold water to remove its natural bitter coating.
- 2. In a medium saucepan, combine rinsed quinoa with 2 cups of water. Bring to a boil over medium heat.
- 3. Once boiling, add a handful of fresh epazote leaves to the saucepan, reduce the heat to low, and cover the pan. Simmer for about 15 minutes or until all the water is absorbed.
- 4. Remove the saucepan from heat and let it sit covered for 5 minutes. Discard the epazote leaves and fluff the quinoa gently with a fork.
- 5. While the quinoa is cooling, dice 500 grams of fresh tomatoes, peel and dice 1 cucumber, and finely chop 1 green pepper.
- 6. In a large mixing bowl, combine the cooked quinoa, diced tomatoes, cucumber, and green pepper.
- 7. In a small bowl, whisk together the juice of 1 lemon, 2 tablespoons of olive oil spread, and a pinch of fine sea salt to create the dressing.
- 8. Pour the dressing over the quinoa mixture and toss until everything is well combined and evenly coated.
- 9. Taste and adjust the seasoning if necessary. Serve chilled or at room temperature.
