- 1. In a mixing bowl, blend 1 1/4 cups water, juice from 1 lemon, 1 can tomato sauce, and 1 1/2 tablespoons vinegar until well combined.
- 2. Pour the mixture into a saucepan and heat gently until warm. Sprinkle 2 tablespoons of gelatin over the mixture and stir until fully dissolved.
- 3. Pour the gelatin mixture into a mold to a depth of 1/4 inch. Chill in the refrigerator until almost firm, about 30 minutes.
- 4. Arrange 8 peas evenly across the firm gelatin layer. Chill the remaining gelatin mixture until it reaches the consistency of unbeaten egg whites, approximately 15 minutes.
- 5. Gently fold 2 boiled and chopped eggs into the gelatin mixture. Pour this over the firm gelatin and peas in the mold.
- 6. Chill the mold in the refrigerator until fully set, about 2 hours.
- 7. Carefully unmold the aspic onto a serving plate. Garnish with fresh greens like lettuce or parsley.
