  • 100 G Jumbo Garlic 100g
  • 1 Piece Buy Fresh Courgettes Zucchini Online | Alli Bhavan 750g
  • - Biona Organic Whole Cherry Tomatoes
  • 1 Pack Planet Organic G's Baby Leaf Spinach
  • 150 G Fudco Soya Chunks
  • 500G Doenjang Soybean Paste, 500G
  • 720G Soba Noodles, 720G
  • 1 Lemon - 1 Each
  • - Schwartz Sesame Seeds
  • 250 Ml Niharti Avocado Oil 250Ml

Instructions

  1. 1. Begin by preparing the zucchini noodles (zoodles). Wash the courgettes (zucchini) thoroughly, then use a spiralizer or julienne peeler to create long, thin noodles. Set the zoodles aside.
  2. 2. Rehydrate the Fudco Soya Chunks by soaking them in hot water for 10-15 minutes. Once softened, drain and squeeze out any excess water. Set aside.
  3. 3. Heat a tablespoon of Olive Oil – Organic in a large pan over medium heat. Peel and finely chop the Jumbo Garlic, then sauté it in the pan until fragrant and lightly golden.
  4. 4. Add the Biona Organic Whole Cherry Tomatoes to the pan and cook for 5-7 minutes, stirring occasionally, until they soften and release their juices. Lightly mash some of the tomatoes with the back of a spoon to create a chunky sauce.
  5. 5. Stir in the rehydrated Fudco Soya Chunks and cook for another 3-4 minutes, allowing them to absorb the flavors of the sauce.
  6. 6. While the sauce is simmering, prepare the avocado sauce. Note: The 'Jellycat Amuseable Avocado' is a plush toy and not an edible ingredient, so it is not used in the recipe. If you have a real avocado, blend it with a splash of olive oil, a pinch of salt, and a squeeze of lemon juice until smooth and creamy. Set aside.
  7. 7. Add the Planet Organic G's Baby Leaf Spinach to the pan with the tomato and soya chunk mixture. Cook for 1-2 minutes, just until the spinach wilts.
  8. 8. Toss the prepared zoodles into the pan and mix well to coat them with the sauce. Cook for 2-3 minutes, just until the zoodles are heated through but still retain some crunch.
