Instructions

  1. 1. Heat 3 tablespoons of olive oil in a large pot over medium heat. Add the chopped onion, sliced celery, and minced garlic. Sauté until the vegetables are tender, about 5 minutes.
  2. 2. Pour in 6 cups of vegetable broth, the tomato sauce, and stir well. Add the diced tomatoes and whisk in a diabetic-friendly stew seasoning mix.
  3. 3. Add the sliced carrots, chopped green beans, and whole kernel corn. Stir to combine and bring the mixture to a gentle simmer.
