Ingredients

  • 50G Picard Chopped Flat Parsley
  • 4 Per Pack Albert Bartlett Butter Gold Bakers
  • 500 Ml Daylesford Organic Hot & Sour Vegetable Broth
  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • 1kg 1kg Green Pepper
  • 50G Pepper Black Ground BWFO
  • 60G Mill & Mortar Organic Salt Of Hearts, 60G

Instructions

  1. 1. Peel and dice 1 medium turnip and 1 medium potato. Cook them in boiling water until tender, about 10-12 minutes. Drain and set aside in a bowl.
  2. 2. Heat 1/4 cup vegetable broth in a skillet over medium heat. Add 1 cup diced onion and 1 cup diced green pepper. Cook for about 4 minutes, stirring occasionally, until softened.
  3. 3. Add 1 cup corn kernels, the cooked turnip, and potato to the skillet. Sprinkle with 1 teaspoon dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss everything together to combine.
  4. 4. Lightly coat a heavy skillet with olive oil spray and transfer the vegetable mixture into it. Spread it out evenly.
  5. 5. Cover the skillet and cook over medium heat for 5 to 7 minutes, until the bottom is golden and slightly crispy.
