Ingredients
- 80 Ml Ladolea Set Of 2 Lemon & Oregano Infused Extra Virgin Olive Oil, 80Ml
- 450G Pack'D Organic Broccoli Florets
- 200 G Authentic Greek Yogurt
- NaN Unsweetened Almond Beverage
- 400 Ml Coconut Merchant Organic Coconut Cream
Instructions
- 1. Preheat your oven to 350°F (175°C).
- 2. Bring a large pot of salted water to a boil. Add 2 cups of mixed vegetables and 1 cup of broccoli florets. Cook for 10 minutes, then drain and set aside.
- 3. In a large mixing bowl, combine 1 can of low-sodium cream of chicken soup, 1 cup of plain Greek yogurt, 1/2 cup of unsweetened almond milk, 1/2 cup of shredded reduced-fat cheddar cheese, and 1/4 cup of finely chopped water chestnuts. Mix well.
- 4. Add the cooked vegetables to the bowl and stir until evenly coated with the sauce.
- 5. Pour the mixture into a large casserole dish and spread it out evenly.
- 6. In a small bowl, mix 1/2 cup of crushed whole-grain crackers with 1 tablespoon of melted unsalted butter. Sprinkle this mixture evenly over the top of the casserole.
- 7. Bake in the preheated oven for 30 minutes, or until the top is golden and the casserole is bubbling.
- 8. Remove from the oven and let it cool for 5 minutes before serving.
