Ingredients

  • 80 Ml Ladolea Set Of 2 Lemon & Oregano Infused Extra Virgin Olive Oil, 80Ml
  • 450G Pack'D Organic Broccoli Florets
  • 200 G Authentic Greek Yogurt
  • NaN Unsweetened Almond Beverage
  • 400 Ml Coconut Merchant Organic Coconut Cream

Instructions

  1. 1. Preheat your oven to 350°F (175°C).
  2. 2. Bring a large pot of salted water to a boil. Add 2 cups of mixed vegetables and 1 cup of broccoli florets. Cook for 10 minutes, then drain and set aside.
  3. 3. In a large mixing bowl, combine 1 can of low-sodium cream of chicken soup, 1 cup of plain Greek yogurt, 1/2 cup of unsweetened almond milk, 1/2 cup of shredded reduced-fat cheddar cheese, and 1/4 cup of finely chopped water chestnuts. Mix well.
  4. 4. Add the cooked vegetables to the bowl and stir until evenly coated with the sauce.
  5. 5. Pour the mixture into a large casserole dish and spread it out evenly.
  6. 6. In a small bowl, mix 1/2 cup of crushed whole-grain crackers with 1 tablespoon of melted unsalted butter. Sprinkle this mixture evenly over the top of the casserole.
  7. 7. Bake in the preheated oven for 30 minutes, or until the top is golden and the casserole is bubbling.
  8. 8. Remove from the oven and let it cool for 5 minutes before serving.
