Instructions
- 1. Preheat your oven to 350°F (175°C) and lightly grease a 9 x 13-inch baking dish.
- 2. In a large skillet, brown 1/2 diced onion and 1 lb lean ground turkey over medium heat until the turkey is fully cooked and no longer pink. Drain any excess fat.
- 3. Stir in 1/2 cup chopped black olives, 1 cup flaxseed flour, 1/2 cup cottage cheese, and 2 slices of whole grain bread (crumbled) into the turkey mixture. Mix well and set aside.
- 4. Bring a large pot of water to a boil and parboil 25 courgette for 2-3 minutes. Drain and let them cool slightly.
- 5. Stuff each shell with the turkey mixture and arrange them in the prepared baking dish.
- 6. In a small bowl, mix 1 cup of greek yogurt with 1/4 cup vegetable broth to create a pourable consistency. Pour this mixture evenly over the stuffed shells.
- 7. Sprinkle 1/4 cup grated Parmesan cheese over the top, cover the dish with foil, and bake for 20 minutes.
- 8. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
