  • 500 Ml Daylesford Organic Hot & Sour Vegetable Broth

Instructions

  1. 1. Preheat your oven to 350°F (175°C) and lightly grease a 9 x 13-inch baking dish.
  2. 2. In a large skillet, brown 1/2 diced onion and 1 lb lean ground turkey over medium heat until the turkey is fully cooked and no longer pink. Drain any excess fat.
  3. 3. Stir in 1/2 cup chopped black olives, 1 cup flaxseed flour, 1/2 cup cottage cheese, and 2 slices of whole grain bread (crumbled) into the turkey mixture. Mix well and set aside.
  4. 4. Bring a large pot of water to a boil and parboil 25 courgette for 2-3 minutes. Drain and let them cool slightly.
  5. 5. Stuff each shell with the turkey mixture and arrange them in the prepared baking dish.
  6. 6. In a small bowl, mix 1 cup of greek yogurt with 1/4 cup vegetable broth to create a pourable consistency. Pour this mixture evenly over the stuffed shells.
  7. 7. Sprinkle 1/4 cup grated Parmesan cheese over the top, cover the dish with foil, and bake for 20 minutes.
  8. 8. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
