Ingredients

  • 80 Ml Ladolea Set Of 2 Lemon & Oregano Infused Extra Virgin Olive Oil, 80Ml
  • 250G Biona Organic Lasagne Pasta Sheets
  • - Petti Delicato Extra Fine Passata
  • - Longley Farm Cottage Cheese
  • 395G D'Aucy Chopped Spinach

Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. Cook 250 g of whole-grain lasagne noodles in salted boiling water until al dente. Drain and set aside.
  3. 3. Spray a 9 x 13-inch glass baking dish with olive oil.
  4. 4. Spread a thin layer of 2 cups passata on the bottom of the dish. Layer with cooked noodles, 1 can (400 g) of spinach, and 1 cup cottage cheese.
  5. 5. Repeat the layers: noodles, 2 cups passata, spinach, and 1 cup cottage cheese, finishing with a top layer of cheese.
  6. 6. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake uncovered for an additional 10 minutes, or until the cheese is melted and bubbly.
  7. 7. Let the lasagne stand for 10 minutes before slicing and serving.
  8. 8. While the lasagne sets, prepare a side salad with fresh greens and your choice of diabetic-friendly dressing.
