Ingredients

  • 500 G Jack'S Cauliflower Florets
  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • 250 G Veenas Fresh Garlic
  • 308G Roasted Sunflower Seeds, 308G
  • 2 Kg Natco Red Lentils (Masoor Dal) 2 Kg
  • - Filippo Berio Garlic Flavoured Olive Oil
  • 100 G East End Ground Coriander
  • 100 G Trs Ground Cumin Jeera Powder
  • 100 G Saras Turmeric Haldi Powder
  • - Wilton Wholefoods Cardamom Powder 10g
  • 50G Top-Op Clove Powder 50g
  • - Natco Ground Cinnamon 100g
  • - Petti Delicato Extra Fine Passata

Instructions

  1. 1. Rinse 1 cup of red lentils thoroughly and bring them to a boil in a pot with enough water to cover. Cook for about 10 minutes until soft, then drain and reserve the cooking liquid.
  2. 2. Heat 2 tablespoons of garlic flavoured olive oil in a large skillet over medium heat. Add 1 finely chopped onion and sauté until softened, about 5 minutes.
  3. 3. Add 1 teaspoon of minced garlic to the skillet and cook for 1 minute until fragrant.
  4. 4. Reduce the heat to low and stir in 1 teaspoon of ground coriander, 1 teaspoon of ground cumin, 1 teaspoon of turmeric, 1/4 teaspoon of ground cardamom, 1/8 teaspoon of ground clove, and 1/4 teaspoon of ground cinnamon. Cook the spices for 1-2 minutes to release their aroma.
  5. 5. Add 1 head of cauliflower, cut into small florets, to the skillet along with 3 tablespoons of passata. Stir well to coat the cauliflower in the spice mixture.
  6. 6. Pour in 1/2 cup of the reserved lentil cooking liquid (or more if needed) to create a sauce. Cover the skillet and cook for 8-10 minutes, stirring occasionally, until the cauliflower is tender.
  7. 7. Stir the cooked lentils into the skillet and mix well. Add more reserved liquid if the mixture is too thick.
  8. 8. Remove from heat and stir in 1/2 cup of sunflower seeds for added texture and flavor.
  9. 9. Serve the dish warm.
