Ingredients
- 500 G Jack'S Cauliflower Florets
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 250 G Veenas Fresh Garlic
- 308G Roasted Sunflower Seeds, 308G
- 2 Kg Natco Red Lentils (Masoor Dal) 2 Kg
- - Filippo Berio Garlic Flavoured Olive Oil
- 100 G East End Ground Coriander
- 100 G Trs Ground Cumin Jeera Powder
- 100 G Saras Turmeric Haldi Powder
- - Wilton Wholefoods Cardamom Powder 10g
- 50G Top-Op Clove Powder 50g
- - Natco Ground Cinnamon 100g
- - Petti Delicato Extra Fine Passata
Instructions
- 1. Rinse 1 cup of red lentils thoroughly and bring them to a boil in a pot with enough water to cover. Cook for about 10 minutes until soft, then drain and reserve the cooking liquid.
- 2. Heat 2 tablespoons of garlic flavoured olive oil in a large skillet over medium heat. Add 1 finely chopped onion and sauté until softened, about 5 minutes.
- 3. Add 1 teaspoon of minced garlic to the skillet and cook for 1 minute until fragrant.
- 4. Reduce the heat to low and stir in 1 teaspoon of ground coriander, 1 teaspoon of ground cumin, 1 teaspoon of turmeric, 1/4 teaspoon of ground cardamom, 1/8 teaspoon of ground clove, and 1/4 teaspoon of ground cinnamon. Cook the spices for 1-2 minutes to release their aroma.
- 5. Add 1 head of cauliflower, cut into small florets, to the skillet along with 3 tablespoons of passata. Stir well to coat the cauliflower in the spice mixture.
- 6. Pour in 1/2 cup of the reserved lentil cooking liquid (or more if needed) to create a sauce. Cover the skillet and cook for 8-10 minutes, stirring occasionally, until the cauliflower is tender.
- 7. Stir the cooked lentils into the skillet and mix well. Add more reserved liquid if the mixture is too thick.
- 8. Remove from heat and stir in 1/2 cup of sunflower seeds for added texture and flavor.
- 9. Serve the dish warm.
